St.Tryfon's Day
February 14th (the Gregorian calendar) or on February 1st
(by the Julian calendar)
St. Trifon's Day (or Day of the grower) is a Bulgarian national holiday in honor of Saint Trifon. Celebrated by wine growers, falconers, gardeners and tavern-keepers on 14 February (by the Gregorian calendar) or on 1 February (by the Julian calendar), when the Bulgarian Orthodox Church officially noted St. Trifon’s Day . The other names of these holidays are Zarezanovden, Trifun Chippy, Trifun Zarezoy, Trifun drunkard.
Then all gather together and choose "king of the vineyards”. Only then began a general feast. "The king is decorated with a garland of vine sticks, which he bears on his head, and with another garland , which puts over his shoulders. He sits on a wheel carrier. Wine harvesters pull wheel carriers and the sounds of the bagpipes, rebecs and drums head to the village or town. There, they stop at each house. The hostess of the house brings out wine in a white cauldron and the king drinks first, and then draws the people of his suite. The remaining wine in the cauldron is splashed over the king and they utter the blessing: "Come, lets have a rich harvest! To pour over thresholds ".
The next two days, known in folklore as "trifuntsi, are worshiped for protection from wolves. The women do not cut with scissors, so that the mouth of the wolf is not dissolved, they don’t knit, spin and sew. They prepare a ritual bread and give it to the neighbors, they put morsels of bread in the feeding of the animals - to protect livestock and people from wolves.
Early in the morning the housewife kneads bread - fresh or leavened . Other then that , they cook chickens which are traditionally stuffed with rice or bulgur. The whole chicken is boiled, then it is basked in the sadzhak. In a new woolen bag you put bread, a chicken and a wooden vessel of wine. With these bags on their shoulders the men go to the vineyards. There they make the sign of the cross, they take pruning knives and from three hubs each person cut three sticks. Then again, they make the sign of the cross and sprinkle the vines with wine . This ritual is called “Cutting".
}It should be prepared with attention from the hostess. She gets up early in the morning to prepare fresh pita bread. After the pita bread is baked they put it in a well preheated oven. After the bread is ready, they cover it with a cotton cloth so that the crust doesn’t dry .As a main course by an old Bulgarian custom is recommended a stuffed chicken.
